Embarking on a 22-day vegan cleanse in December 2013, Beyonce and her husband Jay-Z say they weren't only out to cleanse their cupboards. The duo, who announced their intentions on Jay-Z's website Life + Times, participated in the challenge as a "spiritual and physical cleanse."

INGREDIENTS
2 tbsp olive oil
1 tbsp apple cider vinegar
1 tsp maple syrup
Sea salt and black pepper to taste
4 cups arugula, packed
1-1/2 cups cooked red quinoa, cooled
1-1/2 cups cantaloupe chunks
1/4 cup slivered almonds

DIRECTIONS
1. For dressing: Whisk together the oil, vinegar and syrup. Add sea salt and pepper, as desired.
2. Onto two serving plates divide the arugula, quinoa and cantaloupe. Sprinkle with the almonds and drizzle with the dressing.
