I wish all of you young vegans would stop eating fake "meats" and all that processed shuff. I've been a vegan 26 yrs and veggie all my life and all of my food is made from scratch, fresh from the ground and preservative-free. And no, I don't live on a commune, but in a major city with my husband and our kids and a full-time job. Trust me, you will feel so much better if you're not a junk food vegan. Best of luck!

Easy Vegetarian Foods to Prepare - if you don't know how, Google the item with "How To Make" and I'm sure you'll find instructions: Chilli, felafel and/or hummus sandwiches, baked potato w/ fixin's, spaghetti, red or black beans and rice - and if you are okay eating dairy, quesidillas, pizza, omelettes, various casseroles like scalloped potatoes. It will be easier if you're not still living at home, but if you do live w/ your parents and they are a meat-and-potatoes set, go out and buy Morning Star veggie burgers (there are a ton of varieties), say "no thanks" to the meat, and just have your veggie burger with the sides. I have always been a meat-eater. However, for health reasons, esp. since my mom recently died very young from cancer, I'd like to try out a vegetarian lifestyle. However, I am a very picky eater, and am also raising a 3 yr old son. How can I find the best foods with the most nutrients, yet still tastey?

PETA you are a bit overrated. Life is full of choices and if not eating meat is yours, then LET US BE who LOVE TO EAT MEAT!!! The word out now is SUSTAINABILITY and SUSTAINABLE DEVELOPMENT and not some melodramatic folks who go about bashing and bullying innocent people and promoting hate amongst fellow human beings over animals. Good luck 12:50! If I were you, I would try to do something less drastic than vegan though. For instance, you won't be able to eat peanut butter and jelly sandwiches because most bread has egg in it... Try just being a vegetarian while still eating eggs, cheese, butter and all the dairy. It's a good step in the right direction!!

Quick and easy vegetarian snacks can include fruit, nuts, granola bars, cottage cheese, string cheese, peanut butter cracker sandwiches, I love peanut butter on celery... It's really not that hard once you make the decision to switch.

12:23 A true vegetarian doesn't eat fish (that would pescatarian) but if you have to have it, then dolphin-safe would be the best. Beyond a meatless marinara sauce on noodles, veggie lasagna, eggplant parmasean, enchiladas, tacos, burritos, and nachos will fill you up and have plenty of protein with cheese, beans and rice. Someone mentioned it earlier, but the Boca brand makes a lot of different meat substitutes -- the burgers and chik'n are great. You can eat "Smart" dogs, veggie breakfast sausage and lots of other meat substututes by that brand... Also, most Indian food is vegetarian and so yummy!

You have to switch your mindset from thinking you have to have a cut of meat on your plate as the main dish. Many times, my main dish is a actually something consisting of many ingredients all put together in a tasty way that satisfies me and gets me all the nutrients I need.

12:20 I am in no way attacking you - I just want to clarify something that you said. Organic milk does not mean "cruelty free" it just means that no hormones were injected into the cows and the milk hasn't had anything added to it. There is nothing guaranteeing the welfare of the animals based purely on the "organic" label. If that is something that you care about, you should look further into where the milk comes from. :-)

For anyone who is looking for meat substitutes, I've been a vegetarian since I was 17 (8 years) and like to eat a lot of veggie burgers, "not dogs", beans and rice, and tofu stir fries for protein. You can also make a lot of the same Italian and Mexican dishes without the meat (if you are not vegan and will eat cheese). Although, my grocery store stocks some really great pre-made vegan tamales. There are a lot of options out there!!

Thanks, I can definitely do pasta with no meat or meat sauce. But of course too much pasta isn't good. I don't think I could ever do Tofu. I love bean burritos, but just going day to day, I think I would go out of my mind. What are some other simple things I can eat other than fruit? What about Dolphin Safe Tuna, is that a no-no?

I have been vegan for 2.5 years and I find it pretty easy. I sometimes have a hard time with it as far a the whole social thing. I have to deal with a lot of rude & ignorant comments and it is hard around social events such as holidays, company lunches or being a dinner guest at someone’s home. These definitely do not effect me very often, but it is a little bit difficult to deal with when they happen.
As far as the part food goes, I honestly don't feel like I'm really missing anything. Sure, there are some products (Nutella) that I wish were vegan, but there is normally a vegan alternative that comes close or is better. Becoming vegan has opened my eyes to a totally different culinary world and I find myself eating new foods that taste awesome and are healthy. As far a chicken goes, there are quite a few vegan meat alternatives that come close or taste like the real thing. Try the Boca chik n patties and bake them in the oven.
