Melissa Rauch’s New Children’s Book ‘Tales of Tofu’ Includes This ‘Household Favorite’ Mac ’n’ Cheese Recipe

Melissa Rauch is doing her part to make sure kids eat healthy! The Big Bang Theory actress, 38, released a children’s book called Tales of Tofu on Monday, April 15, that encourages little ones to chow down on the meat substitute.

The work, which was created in conjunction with House Foods America, tells the story of a sweet cube of tofu as she gains confidence and makes food friends. “I’m really passionate about cooking healthy for my family and advocating for all children to have access to healthy food,” Rauch tells Us Weekly exclusively. “I was excited to partner with House Foods to write this book, because it’s just a fun way to get kids excited about this less familiar, but really incredibly-good-for-you-food that they may not have otherwise been excited to eat.”

The book also includes a handful of tofu-centric recipes, which Rauch is particularly proud of. “It’s a fun way for kids to feel like they’re involved in the process,” she explains. “I always find that when kids get to see something in a book in front of them, it makes it more tangible for them and then they can get pumped about doing what they saw in the book.”

Although the Flock of Dudes star, who shares daughter Sadie, 16 months, with husband Winston Rauch, admits it’s hard for her to choose her favorite recipe from the book, the broccoli mac ’n’ cheese dish has become a “household favorite.”

“You would never guess that it’s made with tofu. It’s so good,” she tells Us of the meal, which doesn’t actually contain any cheese. “You don’t necessarily associate tofu with mac ’n’ cheese, but once you make this recipe, you’ll never want to have mac ’n’ cheese another way.”

Broccoli Mac ’n’ Cheese

Makes 6 servings

INGREDIENTS:

• 8 oz brown rice elbow noodles
• 3 cups broccoli florets
• 1/2 medium-sized onion, chopped
• 2 cloves garlic, minced
• 1 package House Foods Tofu, Medium Firm
• 1 cup nutritional yeast
• 1/2 tsp mustard powder
• 2 tbsps olive oil
• Salt and pepper, to taste
• 1/3 cup water

INSTRUCTIONS:

  1. Cook noodles until al dente according to package instructions. Drain pasta, reserving a 1/4 cup of the pasta water.
  2. Prepare the broccoli: Bring water to a boil and fit with a steamer basket. Add the broccoli and cover, cooking until bright green and not overly tender.
  3. In a pan set on medium-high heat, sauté onion and garlic until tender.
  4. Make the “cheese” sauce: In a food processor, combine onion mix, tofu, nutritional yeast, mustard, olive oil and salt and pepper and pulse until smooth. Add water until until you reach your desired consistency.
  5. Warm the sauce on the stove on low heat, stirring frequently (about 10 minutes).
  6. Add noodles and broccoli to the sauce and cook for an additional five minutes. Serve warm.
