INGREDIENTS 2 tbsp olive oil 1 tbsp apple cider vinegar 1 tsp maple syrup Sea salt and black pepper to taste 4 cups arugula, packed 1-1/2 cups cooked red quinoa, cooled 1-1/2 cups cantaloupe chunks 1/4 cup slivered almonds
