Snack on these buffalo cauliflower “wings” as you watch the big game! Sure, they’re not the healthiest way to prep cauliflower, but they’re a tasty alternative to their high-fat chicken counterparts.
Ingredients:
Cooking spray
3/4 cup flour
1 cup water
1 tsp garlic powder
1/2 tsp salt
1/4 tsp freshly ground black pepper
1 medium head cauliflower, cut into florets
2 tbsp butter, melted
2/3 cup buffalo hot sauce, such as Frank’s Red Hot
Low-fat blue cheese dressing and celery sticks, optional
Directions:
1. Preheat oven to 450 degrees; spray a large baking sheet liberally with cooking spray.
2. In a large bowl, whisk together flour, water, garlic powder, salt and pepper. Add cauliflower florets and toss to coat. Spread in a single layer on greased baking sheet and bake for 15 minutes.
3. Meanwhile, in a second bowl, stir together melted butter and buffalo sauce. Add baked cauliflower and toss to coat. Spread in a single layer on a greased baking sheet and return to oven. Bake for 25 to 30 minutes, turning once.
4. Serve with low-fat blue cheese dressing and celery sticks, if desired.
