Lemon Crisp Cocktail
2 oz Hendricks Gin
3 Lemon Wedges
3 pieces Cucumber
½ oz Fresh Lime Juice
2 oz Soda
Instructions
In a martini shaker, muddle the lemon and cucumber. Add the gin and lime juice.
Shake vigorously and strain over fresh ice. Top with the soda.
Garnish with a eon twist and cucumber wheel.

Steamed Chilean Sea Bass
6-7 oz Chilean sea bass
4-5 pieces ginger, julienned (matchstick size)
1/2 cup shitake mushrooms, thinly sliced
5 cilantro leaves
1/2 scallion thinly, cut on the bias
2 cherry tomatoes, cut in half
1-2 tbsp soy sauce
1 tsp sesame chili oiil (if can’t be found, sesame oil will work)
Coriander sprouts for garnish (or 2-3 Cilantro Leaves)
Instructions
Place sea bass in a casserole dish small enough to fit inside a steamer basket. Top with the ginger and shiitake mushrooms. Place the dish inside the steamer basket over simmering water and cover. Let steam for 15-20 minutes or until fish is cooked.
Meanwhile heat sesame oil until it begins to smoke. Turn off heat and place to the side (to be used at end).
Place the sea bass and mushrooms in a serving bowl.
Pour the leftover liquid from the dish on top of the fish.
Place the cherry tomatoes around the sea bass and add soy sauce.
Top the sea bass with cilantro and scallions. Drizzle the hot sesame oil on top of the greens to release their aromatics and oils.
Finish with a garnish of coriander sprouts.
